Thirsty Thursdays: Fabio Viviani Wines - Making Delicious Affordable
Everyone knows that Fabio Viviani is a celebrated chef who shot to fame in the U.S. after appearing on the Bravo Network's "Top Chef" in 2008-09. However, few know that Viviani's first love has always been wine.
"I grew up with wine since I was a little kid. To me wine was part of my culture - a social lubricant - wine is my passion." He says.
Viviani started out working in restaurants in his native Florence (Italy) at the age of 14. Here is where he learned that wine and food go hand-in-hand. Viviani believes that wine should enhance the experience of food rather than challenge it. There are no guidelines he says. "If you like it, go for it. You don't have to spend a lot of money to get good wine.'
To assure that he is bringing the very best to his customers, Viviani chose Santa Barbara, California, (dubbed as the "American Riviera" because of its warm Mediterranean climate) as the home for his vineyards.
Currently the wine collection offers a Chardonnay and a Cabernet Sauvignon. The Chard brings bright notes of golden apples, peaches and pears for a sweeter yet extremely versatile taste. It pairs deliciously with chicken, fish, and pasta with white sauces.
The Cab features dark cherries, blackberries and plums with complex notes of chocolate and coffee. This pairs well with BBQ, grilled/roasted meats and pastas with heavier sauces.
Viviani is hoping to eventually have 8 - 10 varietal wines on the market in the near future.
